So I took a very long break from creating this site (way too long). Well now I'm back. It's a new year and I am feeling great. Actually I am feeling inspired. I love reading other peoples blogs and recreating their amazing dishes. This year, I am going to post more of my own creations.
I asked my 2 kids which recipe was their favorite. Without delay, they both said POWERBALLS.
So, I am sharing this recipe to inspire others. If my 6 and 9 year old love them, I bet you will too. I love to be creative with them and make snacks and meals that they will actually want to eat. This can be a very difficult feat as I'm sure most parents can agree. Now imagine making a dairy, egg and meat free meal made with only whole foods. This recipe is like eating a granola bar but without all the processed additives, no white sugar, and only healthy ingredients. There are even a few sneaky ingredients that my kids do not even realize are in there. So with no further ado, I present to you our family favorite: Powerballs.
Gosh they really are delicious. So what's in them you ask? Get a look at these ingredients and your mouth will start to water.
Natural Peanut Butter
Raw Sunflower Seeds
Dairy Free Chocolate Chips
Black strap Molasses
I don't know why, but when these ingredients are mixed together, magic happens. And the best part- No baking! Just combine in a bowl and voila! In this batch I added black strap molasses to bump up the iron and calcium.
My family LOVES dark chocolate. It's our weakness. So in order for us to get the most chocolate we can, I decided to whiz the chocolate chips through our Nutribullet. Wow. Chocolate in every bite! Although you could totally leave the chips whole and enjoy it that way.
Are you ready to make them? Here's the recipe.
1 cup Rolled Oats
1/2 cup Flax Seed
1/3 cup Unsweetened Coconut
2 Tbsp. Chia Seed
1/2 cup Natural Peanut Butter
1 Tbsp. Black Strap Molasses
1/3 cup Agave
1/3 cup Raw Sunflower Seeds
1/2 cup Dairy free, Dark Chocolate Chips (We like the Enjoy Life Brand)
1. Combine all ingredients in a large mixing bowl.
*Optional: blend chocolate chips in Nutribullet or high speed blender. (Highly recommend this step)
2. Refrigerate for at least 30 - 40 minutes
3. Roll into balls, chill in fridge until ready to eat.
