Thunder Thigh Thinning Soup
Yup, that's the name of this soup. When I first stumbled upon this, I will admit, I was curious. Little did I know that this soup would end up one of our most favored meals.
The name of this soup says it all. Words can't describe how amazing and filling this recipe is. A hearty, flavorful soup. This continues to be our #1 go-to meal when batch cooking for the week. Our kids love it too. Perfect for lunches during the week or paired with some whole grain bread with Dinner. Yum!
1 Onion, diced
4-5 cloves Garlic, minced
1 cup celery, diced
1 cup Carrots, diced
¾ cup Green peppers, chopped
¾ cup Red peppers, chopped
4 medium tomatoes crushed (or *2 cans fire-roasted diced tomatoes)
1 1/2 cups broccoli florettes
1 ½ cups cauliflower florettes
1 cup zucchini chopped
1 can red kidney beans (drained and rinsed)
1 Tsp paprika
½ Tbs oregano
Salt and Pepper to taste
optional: 1 chipotle pepper in adobo for a little heat!
*One day, we didn't have tomatoes on hand, but I did have canned fire roasted tomatoes. Now we only make it this way. I recommend you try it. You won't be disappointed.
Fill a large pot with about 6 cups of water, add tomatoes and all vegetables (excluding broccoli, zucchini and cauliflower) and bring to boil.
Once it reaches a boil, add spices and continue to boil until veggies begin to get tender. Then add cauliflower and broccoli, zucchini, kidney beans, oregano and black pepper and continue to boil for another 5-10 min.
Reduce to simmer and add a pinch of salt to taste
